mocha mochi

Ingredients
  • ½ cup butter, melted and cooled
  • 1lb of mochiko (sweet rice flour)
  • 2¼ cup sugar
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 2 cups brewed coffee, I brewed Verona in a Sowden soft brew
  • 1 cup half and half
  • 4 eggs, beaten
  • 1 tsp pure vanilla extract
Instructions
  1. Preheat oven to 350, and prepare a 13"x9" baking pan with non stick spray. Melt butter and allow to cool.
  2. Brew coffee with your desired brewing method. I suggest the softbrewor a french press to capture the full flavor of the coffee.
  3. Combine mochiko, sugar, cocoa powder and baking powder.
  4. In a separate bowl, beat the eggs, and then add the cooled butter, brewed coffee and vanilla extract.
  5. Combine with the mochiko mixture and stir well, until fully combined.
  6. Pour into prepared pan and bake for 1 hour. Let cool fully.
  7. Cut mochi into desired shapes and dust with cocoa powder or powdered sugar if desired.
