Thyme guacamole

Ingredients
  • 3 avocados, halved, seeded and peeled
  • 1 tablespoon of lime juice
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cumin
  • ½ teaspoon cayenne
  • ½ medium red onion, diced
  • ½ jalapeño pepper, seeded and minced
  • 3 Roma tomatoes, seeded and diced
  • 1 tablespoon chopped thyme leaves*
  • 1 clove garlic, minced
Instructions
  1. Place the avocado pulp and lime juice in a large mixing bowl and toss to combine.
  2. Add the salt, cumin and cayenne and mash using a potato masher, leaving some larger chunks for texture. Add the onion, tomatoes, garlic, thyme and jalapeño and stir to combine. Lay plastic wrap directly on the surface of the guacamole and allow to sit at room temperature for 2 hours before serving.
  3. Serve with lime tortilla chips.
Notes
*thyme leaves can be removed easily from the stem by scraping with the back of a knife.
