blood orange chocolate muffins

Ingredients
  • ½ cup butter, melted
  • ⅔ cup light brown sugar
  • 2 eggs
  • ½ teaspoon pure vanilla extract
  • zest and juice of 2 blood oranges
  • ½ cup dark cocoa powder
  • ½ cup all-purpose flour
  • 2 teaspoons baking powder
  • pinch of kosher salt
  • 1 cup dark chocolate chips
Instructions
  1. Preheat oven to 425 degrees. Prepare muffin tin with liners.
  2. Melt butter in a large, microwave-safe bowl and stir in brown sugar completely. Add eggs and vanilla, stirring until mixture is smooth.
  3. Stir in juice and zest of the blood oranges.
  4. Place cocoa powder, flour, baking powder and salt in the bowl and stir until batter is fully mixed. Add in chocolate chips.
  5. Pour batter into prepared muffin tin
  6. Bake for five minutes at 425 before lowering temperature to 350 degrees. Bake for 15 more minutes
  7. Let muffins cool for several minutes before removing to a wire rack to cool completely.
  8. Best served slightly warm.
