coconut & mango banana bread
- 4 very ripe bananas, mashed
- ⅓ cup coconut oil, melted
- 4 eggs
- 1 teaspoon macadamia nut liquor (you can substitute vanilla extract)
- ½ cup coconut flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup diced mangoes
- ¼ cup white chocolate chips
- ¼ cup sliced almonds
- ¼ cup shredded coconut
- Preheat the oven to 350 degrees.
- Mix all ingredients together until just combined.
- Pour into a lightly greased bread pan.
- Bake for 60-65 minutes or until center is set and top is golden.
