Every year I make cupcakes with these via sticks, but this year I decided to switch it up and make brownies.\u00a0<!--more--><\/p>\n<p>For these brownies, I used a classic fudge brownie recipe and then modified it. If you want more of a peppermint punch, you could also add peppermint extract. The ganache is also quite delicious if you add a stick of Christmas blend VIA to the heavy cream!<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\t<link itemprop=\"image\" href=\"https:\/\/themodernbarista.com\/wp-content\/uploads\/2015\/12\/tmb_pmv2-225x300.jpg\" \/>\n<div class=\"item ERName\">VIA Peppermint Mocha Brownies<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Jocelyn Freeman<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">7 oz. dark chocolate, coarsely chopped<\/li>\n<li class=\"ingredient\">\u00bd cup unsalted butter<\/li>\n<li class=\"ingredient\">\u00be cup sugar<\/li>\n<li class=\"ingredient\">\u00bc cup light brown sugar<\/li>\n<li class=\"ingredient\">2 sticks VIA latte peppermint mocha<\/li>\n<li class=\"ingredient\">2 eggs<\/li>\n<li class=\"ingredient\">1 teaspoon vanilla extract<\/li>\n<li class=\"ingredient\">\u00bd teaspoon salt<\/li>\n<li class=\"ingredient\">1 tablespoon dark cocoa powder<\/li>\n<li class=\"ingredient\">\u2154 cup all-purpose flour<\/li>\n<li class=\"ingredient\">[b]Dark chocolate ganache[\/b]<\/li>\n<li class=\"ingredient\">4 oz. dark chocolate<\/li>\n<li class=\"ingredient\">\u00bc cup heavy cream<\/li>\n<li class=\"ingredient\">4-5 candy canes, crushed.<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat oven to 350\u00baF.<\/li>\n<li class=\"instruction\">Line with parchment and lightly grease an 8&#215;8\u201d baking pan.<\/li>\n<li class=\"instruction\">In a medium bowl, whisk the flour, salt, and cocoa powder together.<\/li>\n<li class=\"instruction\">Put the chocolate and butter in a large glass bowl and microwave for 30 seconds. Stir, and repeat until the chocolate and butter are completely melted and smooth. Add the sugars and VIA sticks. Whisk until completely combined. The mixture should be room temperature.<\/li>\n<li class=\"instruction\">Add 2 eggs and vanilla extract to the chocolate mixture and whisk until combined. Do not overbeat the batter.<\/li>\n<li class=\"instruction\">Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula, fold the flour mixture into the chocolate until just a bit of the flour mixture is visible.<\/li>\n<li class=\"instruction\">Spread the batter in the prepared pan.<\/li>\n<li class=\"instruction\">Bake in preheated oven for about 35 minutes or until a toothpick comes out with moist crumbs attached.<\/li>\n<li class=\"instruction\">Let brownies cool completely, and then make the chocolate ganache.[br]<\/li>\n<li class=\"instruction\">Heat the heavy cream for 30 seconds until the microwave until bubbling. Add the dark chocolate and let sit for 1 minute before stirring until smooth.
