I love yogurt as a quick snack, and the partnership with Evolution Fresh and Dannon did not disappoint! The greek yogurt has a great smooth texture and is on the tangy side, which I love, and the fruit choices are some of my favorites! Right now I am hooked on the raspberry blackberry flavor, and decided to make these breakfast muffins. They are bursting with fresh fruit, and make the perfect on the go breakfast.<\/p>\n<p><!--more--><\/p>\n<p>The recipe is very flexible and interchangeable. Don&#8217;t like raspberries? Use blueberries.\u00a0I think next time I am going to use the passionfruit yogurt and add mango and pineapple and coconut flakes! Aloha!<\/p>\n<p>&nbsp;<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\t<link itemprop=\"image\" href=\"https:\/\/themodernbarista.com\/wp-content\/uploads\/2015\/09\/tmb_muffins.jpg\" \/>\n<div class=\"item ERName\">Evolution Fresh greek yogurt muffins<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">24<\/span><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">3 cups all purpose flour<\/li>\n<li class=\"ingredient\">1 teaspoon baking powder<\/li>\n<li class=\"ingredient\">1\/2 teaspoon baking soda<\/li>\n<li class=\"ingredient\">1\/2 teaspoon salt<\/li>\n<li class=\"ingredient\">1 cup vegetable oil<\/li>\n<li class=\"ingredient\">1 1\/2 cups sugar<\/li>\n<li class=\"ingredient\">2 eggs<\/li>\n<li class=\"ingredient\">1 container Evolution Fresh greek yogurt (I used raspberry blackberry)<\/li>\n<li class=\"ingredient\">zest of one lemon<\/li>\n<li class=\"ingredient\">1 tablespoon fresh lemon juice<\/li>\n<li class=\"ingredient\">2 cups fresh or frozen fruit (I used raspberries)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Preheat oven to 425 degrees.<\/li>\n<li class=\"instruction\">Prepare a muffin tin with paper liners.<\/li>\n<li class=\"instruction\">In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside.<\/li>\n<li class=\"instruction\">In the bowl of an electric mixer, blend sugar, oil, and eggs on medium speed until smooth.<\/li>\n<li class=\"instruction\">Add Greek yogurt (including the fruit at the bottom), lemon zest, and lemon juice and blend until well combined.<\/li>\n<li class=\"instruction\">Gradually add flour mixture on low speed, and mix until flour is incorporated.<\/li>\n<li class=\"instruction\">Gently, fold in the fruit<\/li>\n<li class=\"instruction\">Scoop the batter into each muffin cup, filling them almost full.<\/li>\n<li class=\"instruction\">Bake for 3 minutes, and then reduce heat to 350 degrees and bake for an additional 22 minutes, or until they are golden brown on top.<\/li>\n<li class=\"instruction\">Remove the muffins from the tins and allow to cool.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.3.3077<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I am obsessed with the new Evolution Fresh yogurts!
