Happy new year! 2020 was a wild ride, and while 2021 seems to be as well, I really miss blogging, I really miss creating content, and I really miss connecting with people. So here I am.. trying to make this a more regular thing. 😉 Recently, Starbucks released two new coffees in the retail channel (you will see me refer to this as CPG, consumer packaged goods) Spring Day Blend and Honey and Madagascar Vanilla. These are both pre-ground, and can be found in stores like Target or Walmart, or of course.. Amazon! I normally stay away from the flavored coffees, but I was really impressed with the Spring Day blend, so I decided to give the honey a go.
The first thing I noticed when I opened the bag was the smell. It smelled so good. So good in fact I immediately texted a friend to share my excitement. That hasn’t happened in a while. Since this is pre-ground, I started off by making a pour over. and it was absolutely delicious. side note: I have been so sick and congested, I haven’t been able to fully taste or enjoy things. This was the first sip of coffee I had in several days, and it just what the doctor ordered. Next, I knew I wanted to make a cold brew, so I just did it quick and easy in a mason jar. no real exact recipe, just 4 cups of water to 1 cup coffee in a mason jar for 16 hours. strain and chill.
While the cold brew was steeping, I started meal prepping, and I randomly decided to make these kitchen sink style muffins. Don’t let the ingredients in these scare you, I promise, you can’t even taste the kale 😉
- 1 ripe banana
- ½ cup maple syrup
- 2 cups whole grain oats,
- ⅓ cup non dairy yogurt,
- 2 flax eggs (or your preferred egg substitute)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- 1-2 cups of kale (I used 2 😇)
- 1 tablespoon chia seeds
- 1 scoop protein powder (unflavored)
- ⅔ cups of non dairy milk
- and add last, ½ cup peanut butter. (or any nut butter)
- optional add-ins. chocolate chips, blueberries, walnuts, or anything you have lying around 🙂
- preheat oven to 350, prepare muffin tins with liners.
- in a blender add all the ingredients, except the add ins, if you are using. Make sure to add the peanut butter to the blender last. It'll make your life easier, trust me!.
- blend until smooth. then stir in 1 cup blueberries and ½ cup chocolate chips. you can add nuts, or whatever you have around. I used raspberries, blackberries and blueberries 🙂
- Fill muffin tins about ¾ of the way full.
- bake for 20-22 minutes. remove from oven and allow to cool.
I usually drink my cold brew black, but for this, I added just a touch of oat milk. It’s almost like a dessert!
